Everyone has had one of those days where everything seems to be going wrong. You know the kind- your alarm doesn’t go off so you’re already running late, you can’t find your keys, you spill coffee on your shirt, and so on. We all have them, and we all dread them.

Grease and flour an 8×8 inch baking dish. In a medium bowl, combine flour, sugar, baking powder, salt and baking soda. Add egg and buttermilk or sour milk; mix well.
Add melted butter; stir just until moistened. Pour batter into prepared dish. Bake for 20 to 25 minutes, or until golden brown.
Serve warm with butter and honey, if desired. *To sour milk: place 1 tablespoon lemon juice or vinegar in a measuring cup; add enough milk to equal 1 cup total liquid and let stand 5 minutes before using in recipe. **Or use 3 tablespoons shortening plus 1 tablespoon margarine OR all margarine instead of the butter called for in this recipe. ***For best results when making quick breads or muffins, do not overmix the batter! Overmixing develops gluten which will make your bread tough rather than tender.
